ElizabethThis sounds very tasty, but it is not Irish Stew! A very cheap way of using veg up and extremely tasty. I too am Irish and have never EVER seen an Irish stew recepie that had mince in it! Thankyou!! But, a small point to make irish stew is made with mutton (or lamb) not beef. Really popular in Canada! Used beef cuts instead of mince as not a fan. Irish stew is diced lamb not mince!
